- Separate beer glasses from other liqueur glasses as these carry fats from creamy liqueurs and Spirits.
- A manual glass-washing system with rubber glass -washing brushes or a cabinet system can used.
- Use only specified detergents and rinse aids.
- The manual glass-washing system must be placed into a double stainless steel sink, fitted with a raised level overflow to allow slow purging.
- The water temperature in the detergent sink must between 40˚C and 45˚C
- The glass must be washed thoroughly by turning it clockwise and anti-clockwise at
- least ten times.
- The lip of the glass must be washed separately to unsure all fats and lipstick have
- been removed.
- Rinse the Glass at least three times in the clean water in the rinse sink.
- Drain glasses upside down on a clean polythene draining mat for at least 30 minutes.
- DO NOT dry with a hand cloth as this will leave deposits of fats on the inside of the glass.
- The water both the detergent sink and the rinsing sink should be changed after a batch of 10 to 15 glasses have been washed.
